The release notes Apple published for this update appears to be brief, as there are only 2 minor changes in the update. This only includes the support for older Series 1 and 2 models, AirPods Pro support and bug fixes.
watchOS 6.1 introduces support for AirPods Pro and includes improvements and bug fixes. This update also brings watchOS 6 to Apple Watch Series 1 and Series 2.However, the initial watchOS 6 public updates weren’t supported for Series 1 and 2 Apple Watch models yet, with only the Series 3 and later models to update in September. Apple outlined in an updated support document regarding the watchOS update installation instructions that they would release the watchOS 6 software to these older Apple Watch models at a later time.
Thus, in order to update to watchOS 6.1, users must have an iPhone 6s running iOS 13 or newer and an Apple Watch Series 1 or later. The update can be done by going to Settings > General > Software Update if the watch is updated to watchOS 6 already or by using the Apple Watch app on iPhone.
